I am assuming that you really mean GL of State and Prince Hall. Am I correct? Using AF&AM and F&AM can be misleading because even though all Prince Hall GLs are F&AM, not all GL of State GLs are AF&AM.

It just seems misleading to say that F&AM GLs are irregular and that is just not the case. The letters truly don't determine regularity.
I would say yes, but what is more important is that we don't get caught up in the letters. If each of us familiarizes ourselves with which GLs our jurisdiction has amity with and know exactly what GLs are regular (All GL of State, MWPHGL of State, MW Stringer GL of MS, and the MW Union GL of FL)...
In Florida there are several GLs that are clandestine. They basically popped up out of nowhere. One that comes to mind is Cypress Grand Lodge of Florida

What are some of those irregular F & AM lodges? The reason that I ask is because here in the States, most of the irregular lodges use A.F. & A.M.

None of those activities actually make a man a mason. Unfortunately, many men, regardless of social status, are duped into joining these organizations. No amount of charity work can make a man a legitimate mason.
If there is a Grand Lodge operating in Texas that is not the GLoTX or the MWPHGLoTX, then it is not a regular or recognized Grand Lodge. You could always forward the info to Bro. Ed King at Anti-Masonry: Points of View so that he can add that GL to the list located at More Phonies
