Scottish Rite is a system of Degress, the American (or York) Rite is a conglomeration of Degrees loosely tied together. Both have merit, but it's personal choice. I recommend the Royal Arch even if you focus on SR.

I'm vaguely familiar with it. The Grand Master is a friend and a fairly well-known Masonic author. I may not have answers to your questions, but I can give it a shot.
NM lodges use gavels at all three stations, my CA lodge uses mauls at all three. Haven't visited another CA lodge, so maybe Brother Doug can enlighten us on others here.

The ring I have is 60-70 years old, red-stoned, and I know the original owner was GLNC, so that doesn't fit that theory.

In California, he (and the SD) sit facing the West, in front of the Sec and Treas respectively. In NM, they are in similar position but face each other looking N/S.

Well, there is no hard evidence to support any claim other than they were shut down, with all remaining lands and funds being passed on to the Hospitallers. Everything else is romantic speculation.
There is a lodge called Internet Lodge 9659, chartered by UGLE, and recognised by regular grand lodges worldwide (some of us on this forum are members). However, they do not meet online, nor does any regular lodge I've ever heard of.
